Specialty Potato Production and Marketing in Southern Idaho

U.S. customers are increasingly willing to pay higher prices for gourmet or specialty potatoes that come in a variety of colors and sizes. According to marketing surveys, eight specialty cultivars (Caribe, Epicure, German Butterball, Huckleberry, NorDonna, Russet Norkotah, Viking Red and Yukon Gold) have proven more popular in southern Idaho farmers markets, though commercial grocery market enthusiasm is growing. This recently reviewed classic publication indicates these trends have persisted throughout the first two decades of the 2000s, information of benefit to those developing crop production programs and/or marketing plans.
